

Chicken and Bell Pepper Rice Lunch

Delicious and easy-to-make chicken and bell pepper lunch that's gluten-free and perfectly fits your budget!

What do we need?
🐔 300 g chicken (raw, cut into small pieces)
🍚 200 g rice (raw, rinsed with water)
🌶️ 1 large bell pepper (cut into strips)
🧄 2 cloves of garlic (finely chopped)
🛢️ 2 tablespoons olive oil (for frying)
🧂 Salt (to taste)
🌿 Pepper (to taste)
How to cook? Easy!
🔥 Heat 1 tablespoon of olive oil in a pan over medium heat. Once the oil is hot, add the chicken pieces to the pan and cook for about 7-8 minutes until nicely browned.
🍅 Add the bell peppers and chopped garlic to the same pan. Cook for another 5-6 minutes until the peppers are softened.
🍚 Meanwhile, place the rinsed rice into a pot with 400 ml of water and a pinch of salt. Bring to a boil, then reduce the heat to low. Cook for about 15 minutes until the rice is soft and all the water is absorbed.
🤲 Combine the cooked chicken and peppers with the rice in the pot, stirring well. Season with salt and pepper to taste.
🥄 Drizzle the remaining olive oil over the entire mixture, stir, and serve hot.
Tips
To add a bit of heat, include a teaspoon of chili sauce. Alternatively, mix in fresh herbs, like parsley. Your creativity, your flavors! Enjoy cooking!
